Banana Muffins

I have always loved to cook and bake. The reason being I see food as art you can eat. When you cook at home you get to change the recipe and fix your plate to your liking. With this Banana Muffin recipe, I enjoy it with chocolate chips rather than walnuts, my husband prefers them plain, and two of my amazing kids likes them with Nutella. So, add what you like to yours. I hope you enjoy this recipe.

Ingredients:

1 1/2 cups all purpose flour (spooned and leveled)

1 tsp baking soda

1/2 tsp ground cinnamon (can add a little more)

1/4 tsp salt

6 tbsp unsalted butter (melted and slightly cooled)

2/3 cup light brown sugar (packed)

1 large egg (room temp)

1 1/2 tsp pure vanilla extract

2-3 ripe bananas

Instructions:

Preheat your oven to 375 degrees.

Line a 12 count cupcake pan with cupcake liners and set aside.

In a large mixing bowl add all your dry ingredients; flour, baking soda, cinnamon, and salt. Mix together with a fork until its well combined and set aside.

In a separate bowl, peel and mash all your bananas. Do not mash them too much, we want small to medium chunks. Then add your unsalted butter, brown sugar, egg, and vanilla. mix until well combined.

Add your dry ingredients to the wet ingredients. Fold the dough together with a spatula until well combined. Careful not to over mix the dough as it can become dense.

Once those ingredients are combined, take an ice-cream scooper to evenly distribute the batter into the liners. They should be about half to 3/4 full.

Add whatever topping you want, nuts or chocolate chips, before placing them in the oven. If you want to add Nutella you will have to swirl it in with a tooth pick. I like to add half the dough, add Nutella, add the rest of the dough, more Nutella on top and swirl. You can also top it after. Careful not to add too much. A little goes a long way.

Place the muffins in the oven to bake for 16-20 minutes. For my oven I always time it at 18 minutes and they come out perfect.

Let cool for 10-15 minutes and enjoy!

Thank you so much for stopping by and checking out my website! I hope these banana muffins bring a little sweetness and joy to your day.
